It surely is a journey. The taste of 7100 islands of the Philippines is truly breathtaking. It was a night of new experience bursting of taste and Filipino Culture. Everything was serve in style and elegance in a true Filipino essence.

Chef Rolando Laudico (owner of Bistro Filipino) with Chef Myrna Segismundo (Managing Director of ABS-CBN’s exclusive Restaurant 9501) and Pastry Chef Jill Sandique (apprentice under Nick Malgeri, executive pastry chef of the Windows on the World) has indulge our taste buds with modern Filipino dishes.

Thanks to Orbit Xylitol, for they had arranged for us a 7-course meal that was a blast.

We started with the TRIO APPETIZERS


Taste No. 345: Crispy Lumpia Cone Filled with Chorizo, Prawns and Heart of Palm Topped with Spicy Sinamak Sorbet
Taste No. 6,413: Crunchy Smoked Milk Fish Balls Stuffed with Fresh Mozzarella
Taste No. 212: Spicy Sisig Basket in Mini Crispy Rice Baskets with Quail’s Egg and Crispy Pork Rind

I really like the Spicy Sisig and the Crispy Lumpia with the cold vinegar.

Followed by the TRIO OF SOUPS


Taste No. 468: Beef Consomme Garnished with Fresh Corn, Carrots and Potato Croquette Stuffed with Beef and Cabbage
Taste No. 28: Adobo Shiitake Mushroom Puree Topped with Creamy Garlic Foam Drizzled with White Truffle Oil
Taste No. 914: Oven Roasted Pumpkin and Eggplant Puree garnished with Crispy Ocra, and a Dollop of Shrimp Paste Cream

After that the SALADS are server

Taste No. 2,186: Mesclun Salad Tossed in Dijon Shrimp Paste Vinaigrette topped with Dried, Green & Ripe Mangoes, Tomatoes and Cashew Crusted Kesong Puti


The combination of the 3 mangoes are distinctly surprisingly and tasty.


For the INTERMEZZO is the Taste No. 281: Tamarind Granite


Interesting.

And we were serve two delicious MAIN COURSE

First the SEAFOOD COURSE


Taste No. 94: Lapu-lapu and Prawns in Coco-Lambanog Sause Coriander, Asparagus and Fennel Cherry Tomato Sofrito Brown Rice with Sun-Dried Mangoes


It was so tasty that I thought I wouldn’t have room for the MEAT COURSE.

Then the MEAT COURSE


Taste No. 412: Crusted Wagyu Beef Fillet Cashew-Humba Sauce and Vegetable Barbeque with Sweet Potato Mash


The Beef is perfectly cooked. Tender and juicy, just the way I like it.

Followed with the CHEESE COURSE


Taste No. 741 Kesong Puti with Guava Confit with Galletas

And for DESSERTS


Taste No. 1376 Pili Sansrival
Taste No. 442 Mango Canonigo

Bistro Filipino is a nice and quite place to dine. Incorporating our ancestral and native design. and serving mainly Filipino dishes that will truly capture your the name truly describe the modern Filipino.
