Menudo Sikreto
Last night I was asked by my eldest if her schoolmates can come and stay for lunch. I said “Yes”. So she urgently asked me, “Ano ang ulam bukas?” (“What’s for lunch?”) I told her I will just cook my favorite dish. ”Ok, sige gusto ko yun.” (“Ok, I like that.”) is her only reply. Not even asking me what it is. But I think she got a good idea what I’m talking about.

So I started preparing the meat. First, I combine 1/2 kl. pork pigue cut into cubes, 5 pc. squeeze calamansi juice, and 1 1/2 tbsp s0y sauce in a large bowl. Mix well and marinate it overnight but you can marinate it for at least 3 hrs. in the fridge.

About 10:30 earlier, in a large saucepan, I heat 1/2 cup margarine. Then sauted 1 tbsp minced garlic, 1 pc. chopped onions and tomato sauce. Then added 3/4 cup diced red bell peppers and the marinated meats. Mix well.

Allow to boil then let simmer, covered until meats are tender. Add 150 gms. liver and 1 cup potatoes (both cut in cubes) and cook untill tender. Add 1/2 cup hotdog (cut in any way you want) then season with 1 tbs salt, 1 tbsp sugar, and 1/2 tbs pepper. Mix well.

Serve hot.
