Yesterday, was a rest day for me. I just want to sit, watch TV and read a little of the book I want to finish but still have no energy to do.

Was thinking of what to do. Then it popped in my head. Palitaw!

Palitaw is a sweet rice cake in the Philippines. It is the easiest rice based snack to make.

What you need:

2 cups malagkit, finely ground
1 cup water
1 cup grated coconut
1 cup brown sugar
1/4 cup linga, toasted
sesame seeds, toasted

How to make it:

1. Mix malagkit in water then leave for 1 hour.
2. After and hour,  form malagkit into a small balls.
3. Then use your hands to flatten the ball into the flat circle.
4. Boil water over high heat. Drop each flatten malagkit into boiling water.
5. When it starts to floats, remove and place it to a bowl of cold water.
6. While palitaw is cooling combine grated coconut, toasted linga, toasted sesame seeds and brown sugar
7. Drain water from bowl.
8. Sprinkle on each palitaw the combination made earlier.

Serve hot and Enjoy!
